Caramelized Pineapple Slices
1 pineapple (cut into 1-inch thick slices )
Jalapeno Infused Tequila
1 cup silver tequila
1 jalapeno (sliced into rings)

3 ounces jalapeno infused tequila
1 ounce triple sec
2 1-inch thick slices of grilled pineapple (chilled)
3 Tablespoons fresh lime juice ((juice of 1 lime))
2 Tablespoons agave syrup (to taste)
3/4 cup water
1 teaspoon vanilla extract

To infuse the jalapeno, simply slice up a single pepper and toss it in a jar with the tequila (we recommend a glass jar, as plastic can sometimes capture flavors a bit). Let the jar sit for 12 hours, then give it a sip. If it isn’t spicy enough, let it sit another 12. If you think it’s good to go then strain out the jalapenos. The tequila you don’t use can be stored in the freezer.
Cut the pineapple into 1 inch thick rings and oil it lightly as you preheat the grill to medium-high heat. Grill it for about five minutes on each side until you have some nice grill marks. Pop the slices in the fridge until they’re nice and chilly. We recommend doing this when you make the jalapeno infused tequila so that the slices have plenty of time to chill.
